Yield: About 5 Dozen Small Cookies
For the cookies:
1/2 Cup Butter
1 Cup Peanut Butter
1 Cup Sugar
2 Eggs
1 Teaspoon Vanilla
1 1/2 Cup Flour
1/4 Teaspoon Baking Soda
1 Teaspoon Baking Powder
1/4 Teaspoon Salt
- Set oven 375.
- In a Kitchen Aid mixer with the paddle attachment, cream together the butter, peanut butter and sugar until fluffy.
- Beat in eggs and vanilla.
- Whisk together the flour, baking soda, baking powder, and salt in a separate bowl.
- Gradually add the dry ingredients to the creamed mixture until completely incorporate.
- Drop teaspoon size dough balls onto a lined cookie sheet. They don't spread very much so you can put more then normal on a cookie sheet.
- Bake at 375 for about 8 minutes or until slightly browned.
- While the cookies are cooling, make the frosting.
For the frosting:
1/2 Cup Butter
1 1/2 Cup Powdered Sugar
2 Teaspoons Vanilla
3/4 Cup Peanut Butter
- Melt the butter, then beat in the powdered sugar and vanilla with hand mixer.
- Then add the peanut butter and mix until smooth.
- Add milk if the frosting becomes too thick.
- Spread a generous amount on each cookie.
- ENJOY!!
